Sandhill Wild Rice Loaded Footballs

Ingredients:

2 1⁄2 cup cooked Sandhill Wild Rice

3 slices bacon

1⁄4 c finely chopped onion

1⁄2 jalapeno chopped finely (optional)

1⁄2 cup finely chopped pecans (optional)

1 c shredded cheese cheddar cheese
2 oz cream cheese
1 egg

3⁄4 tsp. salt

2 to 4 oz blue cheese

Shredded mozzarella cheese for garnish

Directions:

  1. Cook the bacon until crisp, chop finely.

  2. Mix 2 cups of the Sandhill Wild Rice, bacon, onion, jalapeno and pecans in a bowl. Put the re- maining 1⁄2 cup wild rice in a food processor and mix until it is very fine and sticky. Add cheddar cheese, cream cheese, egg and salt. Pulse three to four times until combined.

  3. Remove the mixture from the food processor and add to the wild rice and bacon mixture. Combine thoroughly. Form mixture into golf ball sized balls. Push a small piece of blue cheese into the center of each ball and form into football shapes.

  4. Place in air fryer and cook at 375 degrees for 10 minutes. Remove from air fryer. Garnish with mozzarella cheese by placing one long piece of cheese on top and three small pieces of cheese vertically across the long piece to look like lacings on the football. Pop in the microwave for 10 to 20 seconds to melt the cheese slightly.
